What is Koshary?

Hearty, wholesome,
unmistakably Egyptian.

Koshary is a nutrient-rich mix of grains, pulses and pasta, bathed in a zesty tomato sauce, topped with crispy fried onions and a sprinkling of doqqa nuts: filling, balanced, and naturally plant-based at its core.

Born in Egypt and eaten daily by millions of people, koshary is the dish that crosses every table, rich and modest, city and village, north and south. In Luxembourg we're keeping it faithful to Cairo, and adding a few toppings and variations to greet our new home.

Naturally vegetarian at its core, and easily topped with chicken, beef or falafel for those who want it that way.

    Long-grain, fluffy base.

    Brown Lentils

    Earthy, protein-rich core.

    Pasta

    Short pasta, tossed through.

    Vermicelli

    Toasted, threaded into the rice.

    Chickpeas

    Whole, tender, warmly spiced.

    Tomato Sauce

    Slow-simmered, cumin & chilli.

    Crispy Onions

    Deep-fried until amber and sweet.

    Vinegar-Garlic Drizzle

    The bright finish (da'a).

Ask any Egyptian what they'd eat on their last day in Cairo. Most will say koshary.

It's the bowl families share at home and professionals grab at lunch, the everyday ritual of a nation. Kosharista brings that same ritual to Luxembourg, unchanged.

Koshary is proudly, purely Egyptian. In the dossier that earned its UNESCO recognition, Egypt traced the dish's roots deep into its own history, its core ingredients depicted on temple walls and their remnants found in Pharaonic tombs.

A dish carried through dynasties, empires and centuries, and still, today, the daily meal of a nation.

Our Story

A recipe worth
crossing continents for.

Koshary is the food of Egypt's people, fuel of a nation, and a daily ritual. We're bringing it to Luxembourg exactly as it's meant to be, with recipes rooted in Cairo's oldest koshary houses and sourcing secured across the region.

Living in Luxembourg, we found this beloved dish nowhere to be found. Kosharista is our answer: a piece of home, shared with a new one.
